           1. Vegetable Manchurian 


           Preparation Time:    Cooking Time:  

             Ingredients
           For The Vegetable Balls



             3 cups finely chopped cabbage
           1/4 cups carrot , grated
           1/2 cup chopped onions
           2 tbsp cornflour
           5 tbsp plain flour (maida)
           1 tbsp finely chopped garlic 
           2 tsp finely chopped green chilies
           salt and to taste
           oil for deep-frying

 
         For The Sauce
            

            1 tbsp garlic, finely chopped
          2 tsp finely chopped green chilies
          2 tsp finely chopped ginger
          1 cup clear vegetable
          stock or water 

          1 tbsp soya sauce
          1 tbsp cornflour  mixed with 1 cup of water
          2 pinches of sugar
          2 tbsp oil
          salt to taste
 

             

            Method

        For Vegetable Balls        

Combine the cabbage, carrots, onions, cornflour, plain flour, garlic, green chili, salt and pepper in a bowl and mix well using your hands. Shape spoonfuls of the mixture into small balls. Deep fry a few balls at a time in hot oil until golden brown. Drain on absorbent paper and keep aside.

            

         For the sauce 

Heat the oil in a wok or frying pan on a high flame. Add the garlic, green chilies and ginger and stir fry over a high flame for a few seconds. Add the stock, soya sauce, cornflour paste, sugar and salt and simmer for a few minutes.  


           How to serve 

Just before serving, put the vegetable balls in the sauce and bring to a boil. Serve hot.

2. Veg Chow Mein 

 

           

         Ingredients 

        Noodles - 1 packet (200 grams) 

        Carrot -1 (cut into fine long thin strips) 

        Capsicum - 1 (cut into fine long strips) 

        Cabbage - finely chopped (1 cup) 

        Oil/Butter - 2 tbsp 

        Salt - 1 tsp 

        Black pepper - 1/4 tsp 

        Ginger - 1" long piece (grated) optional 

        Chilly sauce - 2 tsp 

        Soya Sauce - 2 tsp 

        Vinegar - 2 tsp    

     

        How to make

Break noodles into small parts. Heat water in a utensil enough to submerge the noodles easily. Add 1/2 tsp salt and 2 tsp oil in the water.Once the water comes to boil, put the noodles in it then let it boil for 8-10 minutes. Boil noodles till they turn soft. Turn off the gas. Drain remaining water from the noodles then wash with cold water.

Heat oil/butter in a pan, put ginger, carrot, capsicum and cabbage in the pan. Stir the ingredients continuously for 2 minutes as they get cooked. Now add noodles, salt, soya sauce, vinegar, chilly sauce and black pepper. Mix all the contents in the pan as you stir them constantly for 2-3 minutes on a high flame. Veg Chow mein is ready. Take out noodles in a bowl. 

Serve hot with chutney or tomato sauce and eat. For noodles with onion : finely chop 1 onion, fry in hot oil till it turns light pink and now cook as you add the vegetables. Prepare Vegetable Chow mein by following the above method. Chop spring onions and sprinkle over the noodles.
